Homemade by Michelin-starred chef Andreas Herbst

Homemade and fermented specialities

Andreas Herbst (Gastgeber & Sternekoch)

Homemade at Hotel Riederalm

Whether you try them as part of a menu at the “dahoam” restaurant or use them in your own cooking, Andreas Herbst’s homemade specialities add something extra. His garum, a fermented seasoning, is made from high-quality local ingredients in a process that takes up to several months. Alongside the ingredients themselves, patience and time are what bring out its intense, concentrated flavour.

No local wine? No problem.

Leogang has no vineyards, but that hasn’t stopped Andreas Herbst from developing local alternatives to wine. Try them as part of your gourmet menu, or take a bottle home. We particularly recommend our Koji Ale, made with koji fermentation cultures, and our Riederalm Zwickel, an unfiltered beer brewed in-house.

Wine lovers are well looked after, too. You can still choose from our carefully selected wines or book a wine pairing to accompany your gourmet menu at the Michelin-starred “dahoam” restaurant.

Andreas Herbst – the ideas behind our homemade specialities

The chef behind our homemade products is Andreas Herbst. For him, fine dining should do more than look and taste good. It should express the character of the region and treat its ingredients with respect. Our homemade garum puts that belief into practice, often using parts of an ingredient that don’t feature in the gourmet menu.
