Sustainable Michelin-starred dining
Sustainable fine dining in Leogang
Sustainability stands at the very heart of our approach at the Michelin-starred “dahoam” restaurant. The natural surroundings of Leogang inspire our menus, and respecting them comes naturally to Andreas Herbst.
For us, sustainability means caring for nature so that future generations can enjoy it, too. It also inspires us to discover new flavours in local ingredients and find unexpected ways to combine them. We create new dishes from parts that might otherwise be discarded, and reinterpret recipes from around the world using Alpine produce. Each creation has its own character while doing justice to the dish that inspired it.

Small drops, full of flavour
Homemade by Andreas Herbst
Just a few drops of garum, a fermented seasoning, add another layer of flavour to dishes at the Michelin-starred “dahoam” restaurant. Our home-brewed beers make a balanced addition to meat dishes. These are just two examples of Andreas Herbst’s homemade creations.
His aim is to capture the essence of the finest local ingredients, intensifying and preserving their flavour. It’s about making the most of valuable produce, whether he’s developing garum, beer or another speciality in our kitchen.
